My niece Michelle has a genuine passion for cooking and always searches for ways to make whatever she prepares not only tasty but healthy as well.  

Michelle is a Registered Dietitian Nutritionist and nutrition instructor.  In her spare time, she likes to start (and sometimes finish) knitting projects, spend time at the gym and experiment with new recipes.  She lives in Colorado with her husband, Eric, and their dog Lambeau.

Michelle recently made doTERRA's Red Pepper Manchego Sandwiches with Basil and made a few minor alterations.


Here's what Michelle had to say about the recipe from doTERRA's kitchen:

         We shared with another couple for dinner, and the recipe made four generous servings.

         I followed doTERRA’s recipe with these exceptions:

                    •    I decreased the salt by about half.  One full teaspoon seemed excessive for 4 servings, especially with the salty cheese.

                    •    I didn’t use the full 12 ounces of Manchego.  The slices would have been a bit too thick for my liking.  We ate the rest of that separately.
