Dill and Spearmint Both Contain Carvone
Their aromas couldn’t be more opposite!
For the organic chemists out there, (S)-(+)-Carvone and (R)-(-)-Carvone are classified as enantiomers.
That means they are mirror images of each other, but you can’t superimpose them. Another example of enantiomers are your hands.
The right hand is a mirror image of the left hand, but when you place both hands palm down over each other, the thumbs are pointed in opposite directions.
Having this characteristic is what completely changes the aroma and other properties of the oils!
